Easy Pecan Brittle
Here's a recipe for a real Southern favorite! (At least it is around our house!) Easy Pecan Brittle 2 cups sugar 1 cup light corn syrup 1 cup water 1/8 teaspoon salt 2 cups pecan pieces 1 Tablespoon butter 1 teaspoon baking soda *Please see link below for measurement conversions* Before you start, go ahead and lightly butter a baking/cookie sheet and have it ready to go! You won't have time later. 1) Combine sugar, syrup, water & salt in a large, heavy saucepan or skillet. Bring to a boil over medium-high heat. 2) Add pecans; stirring constantly, continue cooking until syrup begins to turn a golden brown. 3) Remove from heat and QUICKLY stir in butter and baking soda. (This will foam, so stay calm!) 4) Pour onto buttered baking/cookie sheet and spread thin. 5) Let cool completely before breaking into pieces. Store in tightly sealed container. NOTE: I store mine in a ziploc freezer bag, inside the freezer! It keeps indefinately, or until someone finds where you've hid it!) |
